Day 1 Breakfast: Rip’s Big Bowl

I followed the instructions to make servings for 2. As you can see from the photo in my previous post, everything without the fruit almost filled a 1.5 qt casserole dish. Way too much for the two of us. We ended up eating about a third of the mix. Instead of adding grapefruit, kiwi and banana as the recipe calls for, I just sliced 5 small strawberries and it was, to our surprise, pretty yummy with soy milk.

  1. Good Job! We’re beginning as well. The sweetened Almond Vanilla Almond Milk/not off brands but the “real stuff” is great with cereal. Steel Cut Oats are wonderful. You an prepare them ahead, refrigerate and warm up with a teaspoon of brown sugar or NO sugar and blueberries/strawberries/raspberries/banannas…your choice of whatever and even add some of that Almond Milk. YUM. It’s like the cereal in that you fill up and it keeps you going!

  2. I loved the Engine 2 diet and still make the salad dressing loads! I had forgotten about this breakfast but this takes me back – yum
